Properties
white granules, crystalline powder or flakes. Odorless or with slight odor of benzoin. Stable in the air. Extremely easily soluble in water (53.0g/100ml,25℃). Soluble in ethanol (1.4g/100ml). PH of aqueous solution is 8. Its fermentation resistanc eand sterilizability are weaker than those of benzoic acid. When PH is at 3.5, 0.05% solution can completely resist the growth of yeast. When PH is at 6.5, concentration above 2.5% is needed.
